You don’t have to be vegetarian to enjoy a bowl of vegetable stew delicately flavored with saffron.
Ingredients
- 2 tablespoons olive oil
- 1 diced large onion
- 3 garlic cloves
- Salt and pepper to taste
- ¼ teaspoons cumin
- Pinch saffron threads
- 1 lb cubed sweet potatoes
- 6 peeled and sliced carrots
- 1 peeled and diced parsnip
- 1 peeled and cubed celeriac
- 1 cup cauliflower florets
- 2 cup canned tomatoes with juices
- 2 cup chicken broth
- 1 cinnamon stick
How to Make It
- Heat the olive oil in a skillet and sauté the onions and garlic for 5 minutes.
- Stir in the cumin and saffron and keep stirring for 1 minute
- Place the onions and garlic in a slow cooker and add the vegetables, tomatoes, broth and cinnamon stick.
- Season with salt and pepper. Cook on high for 4 hours. Discard the cinnamon stick.
