Turnip and black bean soup recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups black beans, cooked
  • 4 cups water
  • 1 large turnip, diced
  • 1 fresh ear corn  kernels
  • 1 teaspoon fresh thyme, chopped
  • ½ teaspoon cumin
  • 1 bay leaf
  • Sea salt to taste
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne
  • 2 tablespoons chives, minced for garnish
How to Make It
  1. Heat the oil in a large saucepan over medium heat and sauté the onion and garlic until onion is translucent.
  2. Add remaining ingredients and simmer over low heat for 20 minutes. Garnish with chives.
