Ingredients
- 1 tablespoon olive oil
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 2 cups black beans, cooked
- 4 cups water
- 1 large turnip, diced
- 1 fresh ear corn kernels
- 1 teaspoon fresh thyme, chopped
- ½ teaspoon cumin
- 1 bay leaf
- Sea salt to taste
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon cayenne
- 2 tablespoons chives, minced for garnish
How to Make It
- Heat the oil in a large saucepan over medium heat and sauté the onion and garlic until onion is translucent.
- Add remaining ingredients and simmer over low heat for 20 minutes. Garnish with chives.
