This is a delicious dinner style crepe I know you are going to want to make over and over again. It is so delicious, even the pickiest of eater will be impressed by these crepes.
Ingredients
- 1 cup of all-purpose flour
- ½ teaspoons of salt
- 1 teaspoon of white sugar
- 3 eggs
- 2 cups of whole milk
- 1 teaspoon of pure vanilla
- 2 Tablespoons of butter, melted
- 1 pound of turkey, thinly sliced
- 1 pound of mozzarella cheese, shredded
- 2 Roma tomatoes, chopped
- 2/3 cup of premade pesto
How to Make It
- In a bowl, add in the all-purpose flour and dash of salt. Stir well to mix.
- In a separate bowl, add in the white sugar, eggs, whole milk, pure vanilla and melted butter. Whisk well to mix. Add in the flour mix and stir well to incorporate.
- In a skillet set over medium to high heat, grease with cooking spray. Add ¼ cup of the crepe batter. Swirl the skillet around to coat the bottom with the batter. Cook for 1 to 2 minutes. Flip. Continue to cook for 1 minute or until gold. Remove and transfer onto a plate. Repeat.
- On each crepe, add a thin layer of the pesto. Add a layer of the sliced turkey, shredded mozzarella cheese and chopped tomatoes. Roll tightly and place onto a serving plate with the seam side facing down. Repeat. Serve immediately.
