Ingredients

  • 2 lbs pie pumpkin (peeled and seeded)
  • 16 sheets filo (thawed)
  • 4 oz butter
  • 1 cup melted butter
  • 1 cup walnuts (chopped)
  • 1 cup of sugar
  • ½ tsp cinnamon
How to Make It
  1. Grind the pumpkin. Melt the butter in a pan. Add sugar and pumpkin. Cook until the pumpkin is soft. Leave it to cool, and then add cinnamon and walnuts.
  2. Preheat oven to 350 F – 400 F. Take a filo sheet and fold in half. Coat with melted butter.
  3. Fold the bottom edge, then fold the sides. Roll away until it is tight. Coat with more melted butter.
  4. Replicate this process for the remaining filo sheets and put them on a parchment-lined pan.
  5. Bake until it turns golden brown. It usually takes about 20 minutes. Serve and enjoy.
