Ingredients
For Green Papaya Salad (Som Tum)
- 1⁄4 ounce cilantro, torn
- 1⁄4 ounce Thai basil, torn
- 1⁄4 ounce mint, torn
- 1 teaspoon dried baby shrimp
- 1 teaspoon minced Thai chilies (more if you like it hot)
- Pinch of salt
- Pinch of sugar
- ½ lime juice
- 1 tablespoon fish sauce
- 1 tablespoon rice wine vinegar
- 1 teaspoon chopped ginger
- 1 teaspoon minced garlic
- 1⁄8 ounce diced Thai basil or mint, for garnish
- 6 ounces shredded green papaya (available in most Asian markets)
- 2 ounces diced tomatoes
- 2 ounces julienned green beans
- Crushed roasted peanuts, to garnish
For Tiger Wings
- 1 pound fresh chicken wings
- 1⁄2 cup cornstarch, to coat
- Salt and pepper, to taste
- 1 teaspoon Thai chilies (more if you like it hot)
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 1 lime leaf
- 4 tablespoons sambal
- 1 cup brown sugar
- 1 ounce fish sauce
How to Make It

For Green Papaya Salad (Som Tum)
- With a mortar and pestle, muddle all ingredients except for shredded green papaya, diced tomatoes, julienned green beans, and crushed roasted peanuts. Muddle until soft and well combined. Adjust seasoning to taste. Toss the papaya, tomatoes, and green beans with the dressing and plate. Garnish with more herbs and crushed roasted peanuts. For Tiger Wings
- The use of a deep fryer is recommended for this recipe. If no deep fryer is available, use a deep frying pan with at least 2" of oil. Dredge chicken wings in cornstarch seasoned with salt and pepper to coat. Fry in 250°F oil for 8 minutes. Freeze wings until they are solid. Remove wings from freezer. Fry wings for another 6 minutes in 250°F oil. Freeze wings again until solid. Remove wings from freezer when ready to finish dish. In a wok, combine all other ingredients over medium-high heat and sauté until a thick sauce is achieved, about 5–10 minutes. Adjust seasoning if necessary and remove from heat. Fry wings for the third and final time at 350°F for 6 minutes. Toss wings in sauce. To Complete
- Plate to your preference. In the restaurant these dishes are served separate family style.
