Ingredients
Dressing
- 2 tablespoons walnut oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic, minced
- 2 scallions, finely chopped
- 2 tablespoons fresh parsley, chopped
- ¼ teaspoon oregano
- 1 tablespoon fresh thyme, chopped
- Sea salt to taste
- ¼ teaspoon freshly ground black pepper, or to taste
Salad
- 1 cup aduki beans, cooked
- ¼ cup slivered almonds
- ½ red bell pepper, sliced
- 1 tomato, chopped
- Several leaves of romaine lettuce
How to Make It
- Whisk oil, vinegar, garlic, scallions, parsley, oregano, thyme, salt, and pepper together in a small bowl.
- Place the beans, almonds, peppers, and tomato in a salad bowl and toss with the dressing. Serve on a bed of romaine lettuce.
