Ingredients
- ¾ cup finely chopped pecans
- ½ cup whole-wheat flour
- ½ cup all-purpose flour
- ½ cup dried cranberries, chopped
- ½ teaspoon cinnamon
- 1/8 teaspoon salt
- ½ cup confectioners’ sugar, plus extra for dusting
- 1/3 cup light, trans-fat-free margarine
- 1 egg white
- 1 teaspoon vanilla extract
How to Make It
- Preheat oven to 350°F.
- In a medium bowl, combine pecans, flours, cranberries, cinnamon, and salt.
- In a large bowl, cream ½ cup confectioners’ sugar with margarine. Add egg white and beat until light and fluffy. Beat in vanilla. Gradually add flour mixture and beat on low speed until dough forms. Shape dough into 1-inch balls; place 1 inch apart on baking sheets.
- Bake 10 to 12 minutes, or until lightly browned on bottoms. Transfer to a wire rack to cool completely. Dust with confectioners’ sugar and serve, or store in an airtight container.
