This southern staple casserole will deliver on gooey deliciousness even if you don’t arrange the marshmallows in concentric circles. It is a perfect dish for your first Friends giving.
Ingredients
- 8 medium sweet potatoes, peeled and cut into ½-inch cubes
- ½ cup whole milk
- 4 tablespoons (½ stick) unsalted butter
- ½ teaspoon ground nutmeg
- 1 teaspoon kosher salt, plus more for salting water
- 1 teaspoon freshly ground black pepper
- 2 cups marshmallows
How to Make It
- Preheat the oven to 375°F.
- Place sweet potatoes in a large saucepan and cover them with water. Salt the pot generously and then set the saucepan over medium heat and bring to a boil. Reduce the heat, and let simmer until the sweet potatoes are easily pierced with a fork, about 20 minutes. Drain and return the sweet potatoes to the saucepan.
- Add the milk, butter, and ground nutmeg to the saucepan, and mash the mixture with a potato masher. Mash until smooth, then season with salt and black pepper.
- Transfer to a 2-quart baking dish and top with the marshmallows.
- Bake for 20 minutes, or until the center is warmed through and the marshmallows have browned slightly. Remove from the oven and serve warm.
