Lots of people think savoury when they hear flatbreads but you can make some fantastic sweet ones too. Here are 2 classics apple & cinnamon and banana, chocolate and hazelnut. Real winners! Each flat bread will serve 8-10 happily serve warm with some vanilla icecream. Delicious!
Ingredients
- 1 lb 2 oz 4 cups (500 g) strong white flour
- 5 fl oz ½ cup & 2 tbsp (150 ml) warm water
- 4 fl oz ½ cup (120 ml) milk
- 1 egg
- 1 oz 2 tbsp (30 g) butter
- 1 oz 2 tbsp (30 g) caster sugar
- ¼ oz 1½ tsp (10 g) fine sea-salt
- ⅛ oz 1¼ tsp (5 g) fast acting yeast
Apple & Cinnamon
- 3 eating apples
- 2 oz scant ½ cup (50 g) icing (confectioner’s) sugar
- ½ tsp ground cinnamon
Chocolate, Banana & Hazelnut
- 2 medium bananas
- 5 oz (150 g) milk chocolate
- 2 fl oz ¼ cup (50 g) double (heavy) cream
- 2 oz ½ cup (50 g) hazelnuts, roughly chopped or bashed in a pestle & mortar
How to Make It
- Mix together the flour, water, milk, egg, butter, caster sugar, yeast and salt. Knead to get a smooth soft dough. Leave covered to rise in a warm place for about an hour or until doubled in size and puffy.
- Split the dough into 2 equal pieces and roll each one out on a lightly floured surface to get a rectangle about 25x30 cm/10x12 inches. For the Apple Flatbread
- Core the apples and slice them very thinly, leaving the skin on. Arrange the slices over the top of the dough.
- Bake for 10 minutes turning from time to time to get an even bake. When it’s cooked take the flatbread out of the oven and let it cool on a cooling rack
- Mix the cinnamon with the icing (confectioner’s) sugar and the smallest amount of water to get a thick icing.
- Take the apple flat bread out of the oven and let it cool for 10 minutes before drizzling the cinnamon icing over the top. For the Banana, Chocolate & Hazelnut Flatbread
- Melt the chocolate and cream together in a heavy saucepan near the oven door and mix together with a spatula. Spread the chocolate mixture over the top of one of the rectangles. Peel and slice the bananas and arrange them over the top of the chocolate spread.
- Bake the flat bread in the oven for 5 minutes, turning from time to time to get an even bake. After the 5 minutes, sprinkle over the hazelnuts and return to the oven for another 5 minutes. Take the flat bread out of the oven and let it cool on a wire rack for 5 minutes before chopping into pieces and serving warm.
