Sunshine broccoli salad recipe

Inspired by the Bells Bend Farms potluck, this salad looks as much like summer as it tastes with its golden raisins, yellow bell pepper, and sunflower seeds.

  • Yield: 6 Servings

Ingredients

  • 2 small heads broccoli, cut or broken into 1-inch (2.5-cm) florets
  • ½ yellow bell pepper, seeds and ribs removed, cut into strips about 1 inch (2.5 cm) long
  • ½ cup (85 g) golden raisins
  • 2 tablespoons roasted sunflower seeds
  • ½ cup (120 ml) mayonnaise
  • 2 tablespoons sugar
  • 1 tablespoon cider vinegar
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
How to Make It
  1. In a medium serving bowl, combine the broccoli, bell pepper, raisins, and sunflower seeds.
  2. In a small bowl, combine the mayonnaise, sugar, vinegar, salt, and pepper.
  3. Add the mayonnaise dressing to the broccoli and pepper mixture and toss to coat. Cover and chill the salad for 30 minutes to an hour before serving.
