There are plenty of pie recipes in this book, but this pink stunner has got to be the easiest. All you need is 4 ingredients, a pan, and a freezer. That’s right, you don’t even need an oven! I’ve made this no-bake pie with all different flavors of frozen yogurt, but simple strawberry is my favorite. Creamy and cool, this lightened-up pie hits the spot on a warm summer day.
Ingredients
Crust
- ¼ cup (60 g) butter, melted
- 1½ cups (135 g) gluten-free Graham cracker crumbs
Filling
- 8 oz container fat-free frozen whipped topping, thawed
- 1 quart (480 g) strawberry frozen yogurt, softened
- Light whipped cream and strawberries, to decorate (optional)

Make the crust
- Combine the melted butter and Graham cracker crumbs in a medium bowl. Press the mixture evenly into the bottom and up the sides of an 8 in springform pan. Set aside. Make the filling
- In a large bowl, stir the frozen whipped topping and frozen yogurt together until softened and combined evenly. Spoon the mixture into the prepared crust. Cover and freeze for about 6 hours or overnight. Garnish with light whipped cream and strawberries, if desired. This pie melts rather quickly, so slice it immediately before serving. The pie may be made 1 day in advance.
