Ingredients
- 2 cups (250 grams) pitted dates
- 2 eggs
- coarsely chopped
- 1½ cups self raising flour
- 1 teaspoon bi-carb soda
- 1½ cups boiling water
- Caramel Sauce
- 1 teaspoon vanilla essence
- 1 cup brown sugar
- 100 grams butter, softened
- 300 ml thickened cream
- ¾ cup brown sugar
- 100 grams butter
How to Make It
- Place dates and bi-carb soda in a bowl. Pour boiling water over the top and sit for 10 minutes.
- In a bowl, combine butter, sugar and vanilla. Add eggs, one at a time, stirring well after each one. Fold through date mixture and flour until well combined.
- Spoon mixture into a small, well-greased camp oven and bake for 40-45 minutes, or until a skewer comes out clean.
- Meanwhile, combine sauce ingredients in a saucepan over a medium heat, stirring until boiling. Reduce heat and simmer for 2 minutes.
- Prick pudding all over with a fork and pour half the caramel sauce over the top. Sit for five minutes. Serve and pour remaining sauce over slices.
