In the South, stewed tomatoes can be found in every household, just like sweet tea. Everyone jazzes their stewed tomatoes up a little differently with spices, and some put in okra and corn. No matter how you make it, it’s always best served over rice or with a nice buttered biscuit.
Ingredients
- 4½ cups tomatoes, peeled and diced
- 1 bell pepper, diced
- 1 small Vidalia sweet onion, diced
- ¼ teaspoon hot pepper flakes
- 1 teaspoon garlic, minced
- ½ cup water
How to Make It
- Place all ingredients into your pot. Lock lid and close vent.
- Cook on High Manual Pressure for 12 minutes. Once done, QPR the pressure. It’s ready to serve!
