Spicy bacon wrapped pineapple bites recipe

Ingredients

  • 1 pound bacon (slices cut in half)
  • 1 pineapple (peeled, cut into bite-sized chunks)
  • ¼ cup packed light brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger (grated)
  • ¾ teaspoons cayenne pepper
  • 1 tablespoon pineapple juice
How to Make It
  1. Preheat the main oven to 400 degrees F. Place a baking rack inside a large baking tray or sheet.
  2. Wrap a half slice of bacon around each chunk of pineapple and secure using a cocktail stick. Place the bacon pineapple bite on the rack.
  3. In a small mixing bowl, combine the brown sugar along with the soy sauce, grated ginger, cayenne pepper and fresh pineapple juice.
  4. Spoon a little of this mixture over the top of each wrapped bacon-pineapple chunks.
  5. Repeat until all the ingredients are used.
  6. Transfer the baking tray and rack to the oven and bake for 25-30 minutes.
