A fruity, sweet and salty party finger food.
Ingredients
- 1 pound bacon (slices cut in half)
- 1 pineapple (peeled, cut into bite-sized chunks)
- ¼ cup packed light brown sugar
- 1 tablespoon soy sauce
- 1 teaspoon ginger (grated)
- ¾ teaspoons cayenne pepper
- 1 tablespoon pineapple juice
How to Make It
- Preheat the main oven to 400 degrees F. Place a baking rack inside a large baking tray or sheet.
- Wrap a half slice of bacon around each chunk of pineapple and secure using a cocktail stick. Place the bacon pineapple bite on the rack.
- In a small mixing bowl, combine the brown sugar along with the soy sauce, grated ginger, cayenne pepper and fresh pineapple juice.
- Spoon a little of this mixture over the top of each wrapped bacon-pineapple chunks.
- Repeat until all the ingredients are used.
- Transfer the baking tray and rack to the oven and bake for 25-30 minutes.
