Spiced zucchini bars recipe

You’ll never exclaim, “too many zucchini!” again, once you’ve sampled these yummy bars.

  • Yield: 3 dozen

Ingredients

  • 2 cup all-purpose flour
  • 2 tsp baking soda
  • ½ tsp salt
  • 2 tsp cinnamon
  • 3 eggs, beaten
  • 1 cup oil
  • 2 cup sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 1 cup raisins
  • 2 cup zucchini, grated
  • ¾ cup chopped nuts
  • 16-oz container cream cheese frosting
How to Make It
  1. In a bowl, combine flour, baking soda, salt and cinnamon; set aside. In a separate bowl, whisk together eggs, oil, sugar, vanilla and lemon juice.
  2. Gradually add flour mixture to egg mixture. Fold in remaining ingredients except frosting; pour into a greased and floured 13"x 9" baking pan.
  3. Bake at 325 degrees for 25 to 35 minutes, until lightly golden. Cool; spread with frosting. Cut into bars.
