Spanish-style cod recipe

Great flavor combination, and it’s so easy to prepare.

  • Yield: 6 Servings
  • Cooking Time: 15 Minutes

Ingredients

  • 2 tbsp olive oil
  • 1 small chopped onion
  • 3 minced garlic cloves
  • 3 minced garlic cloves
  • ¼ cup chopped green olives
  • ¾ cup chopped marinated artichoke hearts
  • ¼ chopped sundried tomatoes
  • 1 dash black pepper
  • 1 dash cayenne pepper
  • 1 dash paprika
  • ½ lb scallops
  • 6 cod fillets
How to Make It
  1. Heat the olive oil in a big skillet.
  2. Sauté the onion and garlic for 5 minutes.
  3. Stir in the tomato sauce and then bring to a simmer.
  4. Stir in the remaining ingredients except the seafood.
  5. Simmer for 5 minutes. Add the seafood and simmer another 5 minutes. Adjust seasoning.
