Great flavor combination, and it’s so easy to prepare.
Ingredients
- 2 tbsp olive oil
- 1 small chopped onion
- 3 minced garlic cloves
- 3 minced garlic cloves
- ¼ cup chopped green olives
- ¾ cup chopped marinated artichoke hearts
- ¼ chopped sundried tomatoes
- 1 dash black pepper
- 1 dash cayenne pepper
- 1 dash paprika
- ½ lb scallops
- 6 cod fillets
How to Make It
- Heat the olive oil in a big skillet.
- Sauté the onion and garlic for 5 minutes.
- Stir in the tomato sauce and then bring to a simmer.
- Stir in the remaining ingredients except the seafood.
- Simmer for 5 minutes. Add the seafood and simmer another 5 minutes. Adjust seasoning.
