Enjoy this traditional bitter and refreshing drink from Greece made with almonds and sugar.
Ingredients
- 1 1/3 cup almonds, blanched
- 2 bitter almonds, blanched
- 4 cups white sugar
- 2 cups water
How to Make It
- Working in batches and using a mortar and pestle, ground the almonds with 3 tablespoons of sugar and water until the consistency of a paste is reached.
- In a large saucepan over medium-high heat, combine the rest of the sugar and the water, stirring constantly. Boil for 5-7 minutes or until mixture has reached a syrup-like consistency. Add in the almond paste and boil for 8-10 minutes more. Remove from heat and let mixture cool completely.
- Strain mixture and transfer to a glass bottle.
- Serve 4 tbsp. of Soumada with water for each glass. Enjoy!
