Sweet potatoes are the perfect veggie for your little one’s sweet tooth. After a sprinkle of brown sugar and nuts it tastes more like a treat than a healthy, nutritious food.
Ingredients
- 6 medium (2 pounds) sweet potatoes or yams, peeled and cut into ½-inch cubes
- 1½ cups organic applesauce
- 1/3 cup maple syrup
- 2 tablespoons coconut oil
- 1 teaspoon ground cinnamon
- 1 serving of organic carrot powder or ½ cup of carrot baby food
How to Make It
- Place sweet potatoes in 2 to 3½-quart slow cooker. Mix applesauce, baby food or powder, maple syrup, coconut oil and cinnamon together and spoon over potatoes.
- Cover and cook on low heat setting 6 to 8 hours or until potatoes are very tender. Pour into large bowl and mix with blender on medium until desired consistency.
