Here’s an uncomplicated garden salad for any occasion, even a blind date. Just make sure your friend is willing to share meals if you want a call back.
Ingredients
For the Vinaigrette
- 2 tablespoons white wine vinegar
- 1 tablespoon Dijon mustard
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground black
- pepper pinch of sugar
- ¼ cup extra virgin olive oil
For the Salad
- 3–4 cups chopped romaine, rinsed and dried
- ½ cup grape tomatoes
- ½ cucumber, thinly sliced into half-moons
- 4 scallions, finely chopped
- 2 radishes, thinly sliced
- 1 carrot, peeled and thinly sliced
- salt and pepper, to taste
How to Make It
- Make the vinaigrette: In a small mixing bowl, whisk the vinegar, mustard, kosher salt, black pepper, and sugar. Slowly drizzle in the olive oil until dressing has emulsified, or come together.
- In a large mixing bowl, place the romaine, tomatoes, cucumber, scallions, radishes, and carrots then drizzle in the prepared dressing.
- Season with salt and pepper, toss the salad, and serve immediately.
