Salmon has a very distinctive and delicate flavor. This is a beautiful and elegant recipe that showcases exactly that.
Ingredients
Salmon Patty
- 1 lb Salmon Fillet
- 4 Green Parts of Scallions, Sliced into 1ʺ Segments
- 4 Garlic Cloves, Chopped Finely
- 2 Tbsp Freshly Grated Ginger
- 2 Tbsp Tamari (Darker and richer than regular soy sauce)
- ¼ cup Breadcrumbs
- 2 Tbsp Sesame Seeds
- Salt and Pepper to Taste
- 1 Tbsp Toasted Sesame Oil (Darker and richer flavor richan untoasted)
To Serve
- 4 Hamburger Rolls, Cut Open
- Lettuce
- Asian Sweet Chili Sauce or Peanut Sauce
How to Make It

Make the Salmon Patty
- Acquire some good quality salmon, skin removed and thoroughly deboned. Cut it into chunks and put it in a food processor with the scallions, garlic, fresh ginger, tamari (or soy sauce as an alternative) and sesame oil. Pulse a few times until combined. Make sure the machine doesn’t run, otherwise, you will land up with soup….
- Now pop this in a bowl and use your hands (hands and nails scrubbed clean, or use latex–free surgical gloves if mixing with your hands grosses you out) to incorporate the breadcrumbs and sesame seeds.
- Make four patties, roughly ¾” thick and put a slight indent in the center of each one. Season both sides generously with salt and pepper and pop into the fridge for at least 1 hour.
- If you are running short on time, you can put them in the freezer, but be careful that they don’t solidify. You want them to be firm enough to hold themselves together when you cook them– not frozen solid. Cooking Time
- Heat the grill full blast for 10 minutes or so, and then drop the setting to medium high. Make sure the grill racks are squeaky–clean and properly oiled if you intend to complete your mission with the patties intact.
- Brush both sides of the patties with oil (or a puff of cooking spray) and pop onto the waiting grill. Cook for 5 minutes, loosen with a spatula before attempting to turn them; cook on the other side for 4–5 min so they are just cooked through. Right at the end of the cooking process, pop the buns onto the grill to toast. To Serve
- Arrange the burgers and buns on a plate with lettuce and your chosen sauce drizzled over the top.
