Ingredients
- 10 eggs
- ¼ cup shredded cheese
- ½ cup chopped zucchini
- Cooked, drained and crumbled bacon
- ½ cup chopped mushrooms
- ¼ cup cream
- 1/8 cup water
- 1/8 tsp crushed red pepper
How to Make It
- Preheat oven to 375 degrees and sauté vegetables with red pepper for about 5 minutes, or until tender.
- Remove vegetables.
- In a large bowl, beat the eggs, cream & water together.
- Spray large skillet again. Add in the egg mixture and cook until the mixture sets to the bottom.
- Cook a few minutes more, but not let the eggs to dry completely.
- Place scrambled eggs on pizza pan.
- Top with vegetables, bacon and cheese.
- Bake for 6-8 minutes, or until cheese melts.
