Ingredients
- 1 pound mild Italian sausage, casings removed
- 1 cup thinly sliced red onion
- 1 cup thinly sliced red bell pepper
- 1 cup thinly sliced mushrooms
- 8 ounces uncooked penne pasta
- 2 cups beef broth
- 1 cup evaporated milk
- 1 teaspoon minced garlic
- 2 teaspoons Italian seasoning
- 3⁄4 cup shredded Cheddar
- 1⁄4 cup grated Parmesan
How to Make It
- Crumble the sausage into a large skillet. Add the onion, bell pepper, and mushrooms. Sauté until the sausage is cooked through and the vegetables are wilted.
- Stir in the pasta and broth, bring to a boil, and stir. Reduce the heat and simmer until the pasta is tender, about 15 minutes. Stir in the milk, garlic, and Italian seasoning and heat thoroughly; do not boil. Remove from the heat and add the Cheddar; stir until the cheese is melted. Sprinkle with Parmesan and serve.
