Salumi or grilled sausage with watermelon, tomato, and feta recipe

This dish in particular screams “grilled encased meats!” to me, and summer obviously. Tomatoes, watermelon, and feta are the essence of late summer and are really great with any sausage you can toss on the grill.

  • Yield: 6 Servings

Ingredients

  • 2 cups cubed watermelon (½-inch cubes)
  • 2 cups cherry tomatoes, halved
  • 1 small red onion, sliced as thinly as you can
  • ½ cup mint leaves, torn
  • ½ cup basil leaves, torn
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon kosher salt
  • 6 to 8 ounces cured meat or grilled sausage of choice, cut into chunks
  • 4 ounces feta cheese
How to Make It
    Make the Salad
  1. In a large bowl, combine the watermelon, cherry tomatoes, onion, mint, basil, oil, vinegar, and salt. Toss until well coated.
  2. Put it together and Serve
  3. Place the cured meats or sausages on a serving plate. Scatter the watermelon salad over the meat, crumble the cheese over the top, and serve.
