A funny name for a hearty, satisfying side! Garnish with some crispy bacon to make it even better.
Ingredients
- 1 lb potatoes, peeled and diced
- 2 tbsp butter, sliced
- 1 onion, thinly sliced
- 2 cup cabbage, finely shredded
- salt and pepper to taste
- 0.66 shredded Cheddar cheese, divided
- Optional: additional butter, snipped fresh chives
How to Make It
- Cover potatoes with water in a saucepan; bring to a boil. Reduce heat; cover and simmer for 8 minutes, or until just tender. Drain and rinse under cold water; drain again. Transfer potatoes to a bowl; mash coarsely with a fork and set aside. Meanwhile, melt butter in a skillet over low heat.
- Add onion and cook for 10 minutes, or until soft. Add cabbage to skillet; cook for 5 minutes. Stir in potatoes, salt and pepper. Remove from heat; stir in 2 tablespoons cheese. Transfer to a greased 13"x 9" baking pan; sprinkle with remaining cheese. Bake, uncovered, at 350 degrees for 20 minutes, or until heated through.
