Ingredients

  • ½ milk-fed lamb (ideally Churra lamb)
  • salt
  • 1 L (2 pt) water
How to Make It
  1. Pre-heat the oven to 200˚C (390˚F).
  2. Put the lamb in a terracotta dish with the ribs facing upwards. Sprinkle with some salt and water to help make the skin crispy.
  3. Roast for 1 hour and 30 minutes, then turn the lamb and cook for another 30 minutes until the skin is golden.
