Ingredients
- ½ milk-fed lamb (ideally Churra lamb)
- salt
- 1 L (2 pt) water
How to Make It
- Pre-heat the oven to 200˚C (390˚F).
- Put the lamb in a terracotta dish with the ribs facing upwards. Sprinkle with some salt and water to help make the skin crispy.
- Roast for 1 hour and 30 minutes, then turn the lamb and cook for another 30 minutes until the skin is golden.
