Ingredients
- 50 g low-fat ricotta cheese
- 3 semi-dried tomatoes, thinly sliced
- Fresh basil leaves, torn, to taste (optional)
- 3 rice cakes
- Sea salt and ground black pepper, to taste
How to Make It
- Place the ricotta, semi-dried tomato and basil (if using) in a small bowl and mix until well combined.
- To serve, spread the ricotta and semi-dried tomato mixture over the rice cakes. Season with salt and pepper, if desired.
