Ingredients
- 1 cup cake flour
- 1 teaspoon baking powder
- ½ cup sugar
- 2 large eggs
- 1 teaspoon honey (if not available, corn syrup may be used)
- ¼ cup warm water
- 1 16 oz red bean paste package (sold at Japanese groceries)
How to Make It
- Combine flour and baking powder. Mix well, and sift.
- In a bowl, add honey in the warm water and mix until completely dissolved.
- Add eggs and sugar and continue beating until mixed well. Add flour. Mix the whole with a wood spatula.
- The batter makes 5 to 6 sheets of 7" diameter pancakes. Bake them in a frying pan with a gentle heat just like to bake breakfast pancakes.
- Divide the red bean paste into 3 portions. Make sandwiches by placing one portion of bean paste between each pair of pancakes. Cut each sandwich to 4 quarters like cutting a pie.
