This is a delicious crepe dish that is perfect to make right after your morning workout. It is loaded with extra protein to help you build lean muscles.
Ingredients
For the Crepes
- ½ cup + 2 Tablespoons of egg whites
- 1 tablespoon of pure maple syrup
- 1 scoop of powdered protein
- 2 Tablespoons of almond milk
- ½ Tablespoons of coconut oil
For the Filling
- 1½ cups of strawberries, thinly sliced
- 1 tablespoon of maple syrup
For the Garnish
- 1/3 cup of coconut whipped cream
- 1 tablespoon of coconut, flaked
- 1 strawberry, fresh and thinly sliced
How to Make It
- Prepare the crepes. In a food processor, add in all of the ingredients for the crepes. Pulse on the highest setting until smooth in consistency.
- In a skillet set over medium to high heat, grease with the cooking spray. Add ¼ cup of the crepe batter. Swirl the skillet around to coat the bottom with the batter. Cook for 1 to 2 minutes. Flip. Continue to cook for 1 minute or until gold. Remove and transfer onto a plate. Repeat and set the crepes aside.
- Prepare the filling. In the same skillet, add in the strawberry slices and maple syrup. Stir well until coated. Cook for 3 to 4 minutes or until slightly thick in consistency. Remove from heat.
- Add a layer of the strawberry mix in the center of each crepe. Roll tightly and place onto a plate with the seam side facing down. Repeat.
- Serve with a topping of whipped cream, flaked coconut and the sliced strawberry.
