Onion rings make a crunchy side that’s super-satisfying. These poppy seed onion rings have some extra crunch and are delicious served with sandwiches and burgers – and Tater tots!
Ingredients
- 1 tsp poppy seeds
- 1 cup (125 g) plain flour (unbleached is best)
- ¼ tsp bicarbonate of soda
- ¼ tsp baking powder
- Pinch of salt and pepper
- 1 cup (250 ml) vegan beer (Stella Artois, Budweiser, Beck’s, Carlsberg, San Miguel, Heineken)
- 2 tbsp vegetable oil
- 1 tbsp apple cider vinegar
- Oil, for deep-frying
- 3 onions, thinly sliced
How to Make It
- In a large bowl, combine all the dry ingredients. In a measuring jug, combine all the wet ingredients, then pour them into the bowl with the flour mixture slowly, stirring all the time to make a smooth batter.
- Heat the oil in a deep frying pan or wok until very hot you can test it is ready by dropping a piece of onion in it; it should sizzle.
- Dip the onion slices into the batter and coat, shaking off any excess, then gently place them straight into the hot oil stand back to avoid the hot oil spitting at you. Cook for a minute or so until golden brown, watching them all the time so that they don’t burn. Using a slotted spoon, scoop out the onion rings and transfer to a plate lined with kitchen paper to absorb some of the excess hot oil. Serve immediately!
