Whilst Plantain in many forms is a common snack across Africa, this modern vegan recipe developed by myself coats boiled plantain in groundnut paste and spices and it is full of flavour as well as nutrients.
Ingredients
- 2 ripe plantains
- 2 teaspoons ginger powder
- ½ teaspoon black pepper
- A pinch of salt
- ½ cup breadcrumbs
- 1 teaspoon chilli powder
- 1 teaspoon seasoning powder of choice or equivalent
- 1 cup groundnuts or roasted peanuts
- Vegetable oil for frying
How to Make It
- Peel and cut the plantain into a few pieces and place in a pot.
- Add water and place pot on medium heat, then leave to boil for 10 minutes.
- Drain out the water, add black pepper and use a potato masher to mash together then set aside.
- Add groundnut and ½ cup of water to a blender and blend together until a smooth thick batter is formed.
- Pour batter mix into a bowl and add seasoning powder, ginger powder, chilli powder and salt.
- Pour breadcrumbs onto a flat plate/platter.
- Use a tablespoon to scoop out some mashed plantain and use clean hands to mould plantain into a ball shape.
- Place plantain ball into groundnut mix and roll around a few times until plantain ball is fully coated.
- Transfer plantain ball into breadcrumbs and roll around a few times until plantain ball is fully coated then place aside onto a clean plate.
- Repeat steps 7 - 9 until all mashed plantains are finished.
- Pour oil into frying pan at least 2 inches deep and place on medium heat.
- When the oil is heated up place plantain balls in hot oil and allow to fry until golden brown on all sides (approx. 3 - 5 minutes).
- Remove from oil and place on a plate lined with a paper towel.
- Leave to cool for a few minutes then serve.
