Orange carrot pie recipe

Carrot-based pie is rich with vitamin C and beta-carotene. Moreover, it is delicious! Recipe is for one 9″ pie, 8 portions.

Ingredients

For the Dough
  • 1 egg
  • 1 cup (8 oz) Whole grain flour
  • 1 oz Olive oil
  • 2 tbsp Honey (liquid)
  • 1 (40 g) medium carrot
For the Stuffing
  • 3 medium apples
  • 2 tbsp Liquid honey
  • 1 medium orange
How to Make It
  1. Grate the orange peel; keep 2 tsp. of the peel for the pie.
  2. Prepare the Dough
  3. You can do it in two ways—using a blender or manually. Way 1: To receive carrot dough, you will need to place all the ingredients but flour in a blender and mix well. Pour out the dough in a cup and add 1 tsp. of the orange peel. Add flour and mix the dough with hands. Way 2: Whisk egg and honey. Then add oil and 1 tsp. of the orange peel. Mix all together. Grate the carrot, and add it to the dough. Add flour and mix the dough with hands.
  4. Form the dough into a ball, and place it in a bag in a freezer for 5–10 minutes. It will make the dough easier to work with.
  5. Squeeze the juice from the orange.
  6. Prepare the Filling
  7. Clean apples remove the peel and stones. Cut apples into small pieces, place them in a bowl. Add 2 tbsp. of honey and orange juice. Mix well.
  8. Put the oven on preheat to 380°F.
  9. Prepare for Base
  10. Take the dough out. Roll it using a rolling pin or bottle. The carrot dough might be sticky, so use some extra flour if necessary sprinkle the cutting board with 1 tbsp. of flour and then roll the dough. When it gets sticky again, turn the dough upside down and keep rolling it.
  11. Cut the circle from dough. You can use a lid of the proper size to achieve a perfect circle shape. Place the dough on a wax paper, and put it on a round tray.
  12. Place apple filling in your pie. Distribute the filling in the pie using a tablespoon. When you finish, add the rest of orange peel on a top (1 tsp).
  13. As apple pieces tend to fall out when the pie is ready, I used the rest of the dough to complete the top layer. Roll the rest of the carrot dough and cut 4 long and 2 short strips 0.4″–0.5″ wide (10–12 mm) and apply on the top.
  14. Place the pie in the oven and bake for 40 minutes (380°F). When the pie is ready, you will see the apples turn a golden color.
