Ingredients
- 2 pounds red onion
- 6 cups vegetable stock
- Olive oil
- Salt and pepper
- 4 slices brown bread, toasted
- Grated parmigiano
How to Make It
- In a pot, warm 5 tablespoons of olive oil. Thinly slice the onions, add to the pot and sauté briefly. Add 2 tablespoons of water, and cook over low heat for about 30 minutes.
- Season with salt and pepper, add the broth. bring to a boil, cover, and cook for another 30 minutes.
- Place the bread in a bowl, cover with the onion mixture, and sprinkle with the cheese. Set aside to rest for a couple of minutes before serving.
