Okra is a nutritious vegetable, popular in many parts of Africa. Okra soup can usually be served as a soup to accompany a solid or in some cases served with a stew to mix the okra as the Yoruba’s in Nigeria do.
Ingredients
- 2 cups okra
- 1 medium onion
- 1 teaspoon seasoning powder of choice
- ½ teaspoon ground chilli pepper
How to Make It
- Rinse and cut off the head of the okra.
- Attach s-blade attachment to a food processor then add okra.
- Turn on food processor to chop and mince the okra.
- Place a pot on medium heat and add ⅓ cup of water.
- Allow water to come to a boil then add seasoning powder and chilli powder and mix.
- Allow water to come to a boil then add seasoning powder and chilli powder and mix.
- Okra will be cooked and ready to serve in 5 – 7 minutes.
- Serve with solid of choice, may mix with tomato stew before serving.
