Ingredients
- 1 (10-ounce) package Moroccan couscous
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1 teaspoon dried oregano
- ½ cup chopped red onion
- 2 tomatoes, chopped
- ¼ cup sliced black olives
- ½ cup lemon juice
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh parsley
How to Make It
- Prepare couscous according to package directions. Place in a serving bowl and let cool.
- Once cool, add the remaining ingredients; toss until well combined.
- Cover and refrigerate at least 1 hour, or until ready to serve. Fluff with a fork before serving.
