Ingredients
- 1 head soft lettuce, washed and leaves separated and torn
- ½ small red onion, thinly sliced
- 2 medium carrots, shredded
- 1 small beetroot, shredded
- 1 cucumber, thinly sliced
- 45 g button mushrooms, thinly sliced
- 230 ml of vinaigrette: Apple Cider, Ginger-Plum or Blood Orange
- 1 avocado, peeled, destoned and cubed
How to Make It
- Combine the lettuce, onion, carrots, beetroot, cucumber and mushrooms in a large bowl.
- Add your choice of vinaigrette to the salad and toss gently.
- Top with fresh avocado and serve.
