Market salad recipe

Ingredients

  • 1 head soft lettuce, washed and leaves separated and torn
  • ½ small red onion, thinly sliced
  • 2 medium carrots, shredded
  • 1 small beetroot, shredded
  • 1 cucumber, thinly sliced
  • 45 g button mushrooms, thinly sliced
  • 230 ml of vinaigrette: Apple Cider, Ginger-Plum or Blood Orange
  • 1 avocado, peeled, destoned and cubed
How to Make It
  1. Combine the lettuce, onion, carrots, beetroot, cucumber and mushrooms in a large bowl.
  2. Add your choice of vinaigrette to the salad and toss gently.
  3. Top with fresh avocado and serve.
