Macadamia lime delights recipe

This dessert is like key lime pie without the high-dodmap graham cracker crust. Dust it with Demerara sugar, also called turbinado sugar, which is a coarse light brown sugar with a caramel-like flavor.

Ingredients

  • Non-aerosol cooking spray
  • 1 lime, peeled and sliced into 6 thin rounds
  • 1 cup raw macadamia nuts, soaked in water overnight and drained
  • 2 ounces firm tofu
  • ¼ cup rice milk
  • 4 tablespoons fresh lime juice
  • 3 tablespoons light brown sugar
  • 3 tablespoons hemp seeds
  • 2 tablespoons coconut oil
  • 1 teaspoon pure vanilla extract
  • Kosher salt
  • Demerara sugar, for serving (optional)
How to Make It
  1. Spray a 6-cup muffin tin with cooking spray. Place 1 lime round at the bottom of each cup.
  2. In a food processor, combine the macadamia nuts, tofu, rice milk, lime juice, brown sugar, hemp seeds, coconut oil, vanilla, and a pinch of salt. Blend until smooth and creamy.
  3. Divide the filling among the prepared muffin cups and smooth the tops. Freeze until firm, about 2 hours. Remove the pan from the freezer and allow to thaw slightly before turning the desserts out of the pan so that the lime slice is on top. Set each dessert on a plate and allow to come to room temperature. Sprinkle with Demerara sugar, if desired, and serve.
