Ingredients
- 4 cups white basmati rice (cooked)
- 2 cups cooked garbanzo beans
- ¼ cup sliced scallions
- ½ cup chopped green bell pepper
- 1 cup chopped tomatoes
- 2 tablespoons chopped cilantro
- ½ teaspoon minced fresh ginger root
- 1 clove garlic, minced
- ¼ teaspoon minced red hot chili
How to Make It
- Combine the above ingredients in a large bowl and mix well.
- Serve between grilled tofu slices on a bed of salad greens.
