Keep a can of beer handy. Stir in a little if the hush puppy batter is stiff.
Ingredients
- 1¼ cups self-rising flour
- 1¼ cups self-rising white cornmeal
- 1 tbsp sugar
- ½ tsp seasoned salt
- ½ tsp garlic powder
- ¼ tsp freshly ground pepper
- 1 cup buttermilk
- ½ cup whole kernel corn
- 1 large egg, lightly beaten
- 2½ cups finely chopped onion
- 1 plum tomato, finely chopped
- Vegetable oil
How to Make It
- Combine first 6 ingredients in a large bowl; stir well. Combine buttermilk, corn, and egg; add to dry ingredients, stirring just until moistened. Stir in onion and tomato.
- Pour oil to depth of 2 inches into a Dutch oven; heat to 375°. Drop batter by rounded teaspoonfuls, in batches, into hot oil. Fry 2 minutes or until golden, turning once. Drain on a wire rack over paper towels.
