This quinoa fruit salad is easy to prepare with fresh fruit and a delectable honey and lime dressing. It’s great for lunch or for a healthy snack. It’s a crowd-pleaser at potluck dinners, too.
Ingredients
- 1 cup of pre-rinsed quinoa, dry
- 2 cups of water, filtered
- ½ cup each of strawberries and blueberries, fresh
- ½ cup each of mango chunks and mandarin oranges
- 2 tbsp of oil, olive
- 1 fresh lime, juice only
- 1 tsp of honey, pure
- 1 tbsp of mint leaves, chopped
How to Make It
- Bring filtered water and rinsed quinoa to boil on med-high heat. Reduce the heat to low boil. Cover pan.
- Cook for 12-15 minutes, till quinoa absorbs most of your water. Turn heat off. Leave covered pan of quinoa on burner for five more minutes. Allow to cool down and refrigerate till chilled to your liking.
- Combine chilled quinoa with fruit in large sized bowl. Combine by stirring. Add olive oil, honey and lime juice to jar with lid. Shake well. Toss mixture with salad. Sprinkle on mint leaves. Serve.
