A melt-in-your-mouth treat with a chocolate chip twist
Ingredients
- ½ cup (125 g) unsweetened applesauce
- ½ cup (120 ml) vegetable oil
- 1 teaspoon (6 g) salt
- 2 teaspoons (10 ml) vanilla extract
- 0.66 cup (135 g) granulated sugar
- 0.66 cup (150 g) firmly packed brown sugar
- ¼ cup (22 g) unsweetened cocoa powder
- 1¼ cups (156 g) sorghum flour
- ½ cup (60 g) Bob’s Red Mill white or brown rice fl our
- ½ cup (60 g) Bob’s Red Mill tapioca flour
- 1 teaspoon (4.6 g) baking soda
- 1½ cups (265 g) Enjoy Life semi-sweet chocolate chips
How to Make It
- Preheat oven to 350°F (180°C, or gas mark 4).
- Cream together applesauce, oil, salt, vanilla, sugars, and cocoa. Add in flours and baking soda. Stir in chocolate chips
- Use a small ice cream/cookie scoop to drop dough onto a baking sheet.
- Bake for about 15 minutes. Remove cookies from baking sheet and let cool on a flat surface.
