This pasta recipe is a modernisation of the traditional groundnut soup. This rich groundnut pasta is prepared by cooking pasta in groundnut sauce made up of blended groundnut, tomato paste and coconut milk.
Ingredients
- 4 cups past a of choice
- 1 cup ground nut / roasted peanuts
- 1 small onion (chopped)
- 1 small chilli pepper (chopped)
- ¼ cup tomato paste
- 4 teaspoons seasoning powder
- ½ cup coconut milk
- ¼ cup vegetable oil
How to Make It
- Add groundnut and ¾ cup of water to a food processor and blend until it forms a thick paste, then put aside.
- Add pasta into a pot with hot water and place on medium heat.
- After boiling, strain hot water from pasta and rinse with cold water.
- Place a separate pot on medium heat and add vegetable oil.
- Add onions and chopped chilli into oil and allow to fry for 2 minutes.
- Add groundnut paste and seasoning powder and fry for 3 minutes.
- Add tomato paste and mix in with groundnut, then continue to fry. Add mixed vegetables.
- Add coconut milk and ¼ cup of water and mix all together.
- Add the pre-boiled pasta.
- Mix all together and leave to cook on low heat for 7 - 10 minutes.
- Turn off the hob and serve (may garnish with vegan cheese).
