Ingredients
- 2 Tablespoons of coconut flour
- 1 tablespoon of tapioca starch
- ¼ teaspoons of salt
- 4 eggs
- ½ cup of water
- 1 tablespoon of coconut oil, melted
- ½ teaspoons of pure vanilla
How to Make It
- In a bowl, add in the coconut flour, tapioca starch and dash of salt. Stir well to mix.
- In a separate bowl, add in the eggs, water, melted coconut oil and pure vanilla. Whisk until mixed. Add in the flour mix and stir well until smooth in consistency.
- Set the batter aside to rest for 10 minutes.
- In a skillet set over medium to high heat, grease with cooking spray. Add ¼ cup of the crepe batter. Swirl the skillet around to coat the bottom with the batter. Cook for 1 to 2 minutes. Flip. Continue to cook for 1 minute or until gold. Remove and transfer onto a plate. Repeat. Serve immediately.
