Ingredients
- 2 pounds carrots, sliced
- ½ cup peach preserves
- 1 stick butter, melted
- ¼ cup packed brown sugar
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ⅛ teaspoon ground nutmeg
- 2 tablespoons cornstarch
- 2 tablespoons water
How to Make It
- Combine all ingredients in a large bowl. Label a 1-gallon freezer bag, place it in another large bowl, and pour in the mixture. Squeeze the remaining air out of the bag and seal it. Lay the bag flat to freeze. Serving Day
- Allow the carrots to thaw overnight in the refrigerator. On serving day, pour the mixture into the slow cooker, cover it, and cook on low for 6–8 hours, until the carrots are tender.
