Ingredients
- 1½ cups warm water (about 110°F)
- 2 tablespoons sugar
- 3 to 3½ cups all-purpose flour, plus more as needed
- 1 teaspoon salt
- 1 tablespoon extra-virgin olive oil
- 8 tablespoons (1 stick) salted butter
- ¾ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- ½ teaspoon dried parsley flakes
- 1½ tablespoons grated Parmesan cheese
How to Make It
- In a small bowl, mix together the warm water, yeast, and sugar until just combined. Cover with plastic wrap and let sit for 5 minutes, or until it begins to foam.
- In a large bowl or in the bowl of a stand mixer fitted with the dough hook, combine 1½ cups of the flour and the salt. Stir in the yeast mixture and olive oil and begin to knead by hand or using the dough hook. Add the remaining flour, ½ cup at a time, and knead until the dough has formed a ball and is smooth, not sticky. Cover the bowl with plastic wrap and set aside in a warm place to rise for 15 minutes. It does not need to rise very high.
- Preheat the oven to 400°F. Line two baking sheets with parchment paper or silicone baking mats.
- Lightly flour the counter or a breadboard and divide the dough into 4 sections. Cut those 4 pieces into 4 smaller pieces. Lightly dust your hands with flour and roll each piece into a 6- to 8-inch breadstick. While holding the two ends, twist the dough until it becomes spiraled. As you form them, place the breadsticks on the baking sheets 2 inches apart, tucking the ends under.
- In a small saucepan, melt 3 tablespoons of the butter over medium-low heat. Brush it over the breadsticks. Bake for 12 to 15 minutes, or until the bottoms of the breadsticks are lightly browned.
- Meanwhile, melt the remaining 5 tablespoons butter. Stir in the garlic powder, Italian seasoning, parsley flakes, and Parmesan. Brush evenly over the breadsticks when they come out of the oven.
