Egg plants are known as garden egg in most parts of Africa, and a popular Nigerian dish made from this is garden egg stew which is often served with plantain or yam. Egg plants are incredibly healthy and nutritious.
Ingredients
- 15 garden eggs (mini eggplants)
- 2 medium onions or 1 large onion
- 2 medium red bell peppers
- 1 small scotch bonnet pepper
- ⅓ cup vegetable oil
- 4 teaspoons seasoning powder of choice or equivalent
How to Make It
- Wash and cut off head/stem of each garden egg.
- Place garden eggs into a pot with hot water and place pot on a hob with medium heat.
- Cook for 15 minutes or until soft.
- Strain and transfer to a food processor with s-blade attachment, turn on food processor a few times until all garden egg is minced.
- Transfer minced garden egg into a bowl and rinse out the food processor.
- Add onions, bell peppers and scotch bonnet pepper to the food processor with s-blade and turn on till vegetables are minced
- Place an empty pot on medium heat and add vegetable oil.
- Add minced onions and peppers and fry for 2 minutes.
- Add minced garden egg and seasoning powder (1 teaspoon at a time until desired taste is reached).
- Simmer for 10 minutes, then turn off the hob. Serve with yam or plantain.
