Ingredients
- 12 scallops
- 3¼ lb (1½ kg) onions, finely chopped
- 7 fl oz (200 ml) olive oil
- 1 bay leaf
- 1 tsp pimentón dulce (sweet paprika)
- 3½ fl oz (100 ml) white wine (preferably Albariño)
How to Make It
- Pre-heat the oven to 200°C (390°F).
- Carefully clean the scallops, ensuring that all the grit has been removed, and arrange in an oven-proof dish.
- Gently fry the onion in the olive oil with the bay leaf in a covered frying pan until soft and translucent.
- Add the paprika and then the wine, and allow to reduce.
- Cover the scallops in the onion mixture, and cook in the oven for 7 minutes.
