Ingredients

  • 12 scallops
  • 3¼ lb (1½ kg) onions, finely chopped
  • 7 fl oz (200 ml) olive oil
  • 1 bay leaf
  • 1 tsp pimentón dulce (sweet paprika)
  • 3½ fl oz (100 ml) white wine (preferably Albariño)
How to Make It
  1. Pre-heat the oven to 200°C (390°F).
  2. Carefully clean the scallops, ensuring that all the grit has been removed, and arrange in an oven-proof dish.
  3. Gently fry the onion in the olive oil with the bay leaf in a covered frying pan until soft and translucent.
  4. Add the paprika and then the wine, and allow to reduce.
  5. Cover the scallops in the onion mixture, and cook in the oven for 7 minutes.
