Frigerator fudge recipe

Ingredients

  • 9 ounces (255 g) Enjoy Life semisweet chocolate chips
  • 2 tablespoons (25 g) Spectrum Organic Shortening
  • ¼ cup (60 ml) rice milk or safe milk alternative
  • 3 cups (360 g) powdered sugar
How to Make It
  1. In a large microwave-safe bowl, combine chocolate chips, shortening, and milk. Microwave in 30-second intervals, stirring at each interval, until melted. Stir quickly until smooth. Whisk in the powdered sugar.
  2. Press chocolate mixture into a greased 8-inch (20-cm) square baking pan. Chill in the refrigerator until firm, about 2 hours. Loosen the edges by running a flat spatula or knife around the edges. Use a sharp knife to cut into squares. Sift powdered sugar over top, if desired.
