A staple in North African cuisines, freekeh is a smoky and earthy grain that is nutritious and delicious. This recipe will make it a staple in your house too!
Ingredients
- 2 cups freekeh
- 1 tsp salt
- ¾ cup fresh parsley, chopped
- 1/3 cup fresh mint, chopped
- 1 bunch scallions, chopped
- 2 cans chickpeas, rinsed and drained
- 1 tsp toasted cumin seeds, ground
- 1 tsp red pepper flakes
- ½ cup freshly-squeezed lemon juice
- 2 garlic cloves, minced
- ¾ cup olive oil
How to Make It
- In a medium-sized saucepan over medium-high heat, toast freekeh for 3-5 minutes until fragrant. Add in 4 cups of water and salt and bring to a boil. Lower the heat, cover and simmer for 25-30 minutes or until all the liquid has disappeared. Remove from heat and let it sit for 15 minutes. Take off lid and let it cool for 10 minutes more.
- In a large bowl, combine cumin seed, red pepper flakes, lemon juice garlic and olive oil. Add in the freekeh, herbs, chickpeas and scallions and toss to combine. Enjoy
