Figs with prosciutto and goat’s cheese recipe

This is a starter staple in our house and everyone absolutely loves it. It’s so easy and really quick to make. I like goat’s cheese but you can use any softish cheese you like.

  • Yield: 4 Servingsas a starter (or double up to feed more)

Ingredients

  • 4 figs
  • small tub of soft goat’s cheese (or similar), about 125 g
  • 8 slices of prosciutto
  • bag of rocket leaves
Dressing
  • 2 tbsp olive oil
  • 2 tsp balsamic vinegar
  • salt and black pepper
How to Make It
  1. Preheat the oven to 220°C/200°C Fan/Gas 7.
  2. Cut the tips off the figs and slice a deep cross in each, almost to the base. Squeeze the figs from the bottom, so the points of the quarters splay outwards a little. Put about a dessertspoon of cheese in the centre of each fig.
  3. Wrap each fig in 2 slices of the prosciutto, leaving the tops exposed. Place the wrapped figs in a roasting dish and put them in the preheated oven for about 10 minutes, until the ham is crisp and the cheese has started to melt.
  4. To make the dressing, whisk the oil and vinegar together and season with salt and black pepper.
  5. Put handfuls of rocket leaves on individual plates. Place a fig in the centre of each pile and drizzle the dressing on top.
