“Frittata” is an Italian name for a dish, but this version comes with a twist of Mexican flavor. Many people who are trying to eat healthy avoid eating Mexican food, but this recipe allows you to enjoy those Mexican flavors without so much fat.
Ingredients
- 4 eggs, large
- 1 cup of egg whites, liquid
- 1 chopped green pepper
- ½ white onion, sliced
- 1 tbsp of oil, olive
- 1 diced tomato
- 1 tbsp of taco seasoning
How to Make It
- Preheat the oven to 400F.
- Heat large sized, oven-safe, non-stick pan over high heat.
- Saute onion and bell pepper in oil till soft. Add spices gradually.
- Remove pan from heat.
- In medium bowl, mix egg whites and eggs. Pour over onion and pepper mixture. Sprinkle with the diced tomatoes.
- Place pan in 400F oven. Cook for 9-12 minutes and serve hot.
